Description
Grown at 1900–2300 MASL in Banko Chelchele, Gedeb, within the renowned Yirgacheffe coffee region, this lot is produced by smallholder farmers working in partnership with EDN Ethiopian Coffee Export PLC.
Selected ripe cherries of Ethiopian varieties 74112 and 74110 undergo a distinctive anaerobic fermentation for 5–10 days in sealed, oxygen-free tanks, together with carefully selected botanicals or fruit. Depending on the fermentation style, ingredients such as pineapple, Lippia abyssinica, rosemary, lemongrass or rue are used to shape the character of the coffee. The cherries are then naturally sun-dried on raised beds, with careful turning and sorting throughout the drying process.
The result is an expressive and complex, bright and lively cup, combining pineapple and blackberry with zesty green apple, lemon tea, bergamot and delicate floral notes of lavender and Parma violets, balanced by dark chocolate and toffee.
