Description
Produced at the producer-led Peñas Blancas Coffee Processing Center in Acevedo, Huila, this coffee comes from a project founded by Nestor Lasso and Jhoan Vergara, focused on innovative processing and supporting local smallholder farmers.
This lot features Ombligon, a rare Colombian varietal, recognized by the distinctive navel-like shape at the base of its cherries. Known for its expressive aromatics, pronounced fruit character and natural sweetness, Ombligon responds particularly well to experimental processing. At Peñas Blancas, the variety is combined with carefully controlled anaerobic, washed and honey processing methods, allowing fermentation to enhance its complexity while maintaining clarity and consistency.
The cup is vibrant and fruit-forward, with a juicy acidity, silky body and pronounced sweetness, leading into a smooth, creamy milkshake-like finish. Notes of hibiscus, grenadine, guava and raspberry candy give the coffee a playful and intensely aromatic character.
